Absinthes’ origins are even more ancient than previously thought; the story reaches all the way back to the Byzantine Empire when anise first became a vital ingredient in every hip-and-happening apothecary. The first absinthe, produced in the town of Covet, near Neuchatel, contained star anise, lemon balm (Melissa), coriander, fennel, hyssop, parsley, camomile, veronica and spinach (!) Pre-production sampling must have been involved...

Recipes submitted during August have brought both tears and happiness to my eyes. This one brought much happiness...

Name: Emerald

  • 1.5 Shots Hendricks Gin (infused with cucumber and rose petals),
  • 1.5 Shots Sebor Absinth,
  • 15ml Monin Rose Syrup,
  • Dash Elderflower Cordial,
  • 5 chunks of cucumber,
  • Dash clear apple juice,

Method: In a Boston shaker muddle the cucumber with the Monin syrup and Elderflower cordial. Fill the shaker with ice before building the rest of the ingredients. Shake hard and double strain into a pre-chilled cocktail glass.

Garnish with cucumber and apple fan.
