This month I’m filled with (absinth-fuelled) Spring inspiration! To win, you’re going to need to coax out your inner Yeats and compose a short poem. Absinthe, the once much-reviled brew, gained most of its infamy through the manufacture of inferior products during the French Absinthe heyday, when wine supplies dropped dramatically. In the scramble to capitalise on the massive demand for Absinthe, many companies began creating foul ‘Absinthe’ coloured with Copper Sulphate and with Ammonia added to create the all-important ‘Louche’. Both of these chemicals are highly toxic when ingested…

Name: Bela Pod Frappe

  • 1 shot Sebor Absinth,
  • 2/3 shot Volare Triple Sec,
  • 6-7 fresh Raspberries,
  • juice of half a lime,
  • dash of Monin Sirop de Framboise,
  • champagne

Method: Muddle Raspberries with lime juice and Monin Framboise in a Boston glass. Top up with hard ice cubes, add the Sebor and Volare and shake hard in the Boston shaker. Double strain into a rocks glass filled with crushed ice. Top up with champagne and garnish with fresh raspberries.
