What is Absinthe?

The story of the legendary spirit started during the French Revolution. Thousands of loyalists sought safety through exile in nearby countries. One elderly émigré was Dr Ordinaire, a retired scientist who fled to Switzerland. In the late 1700s, he settled in the town of Couvet, with his housekeeper, and created a new drink using local ingredients. The drink included wormwood bark, star anise, liquorice, fennel, hyssop and coriander. He called the drink Absinthe, after Artemesia absinthium, the Latin name for wormwood.

On his death, Dr Ordinaire left the recipe, and a substantial sum of money, to his trusty housekeeper. On his bequest, she opened a bar and started to sell the drink as Dr Ordinaire's Absinthe. One day, two French émigrés, a Major Henry Dubois and his son in law, Henri Louise Pernod, visited the bar. After trying the Absinthe, the men made an offer to the former housekeeper for the business and the drink. The pair returned to France as the political situation improved and set up their newly acquired business - producing Absinthe. Sales of Dr Ordinaire's Absinthe grew, particularly in Paris where the new drink became fashionable amongst artist and intellectuals.
